Summer Savory Toast with Avocado and Tomatoes

Toast isn’t boring! One day I want to open a cafe featuring crazy, creative toasts. I’m into it. It’s a great way to get rid of little bits of things left over. That’s how this one came about – I had a small bit of corn and beans left over from dinner the night before, but not enough to really do anything with. But it was the perfect amount to top my morning piece of toast, so here we are! 

I also think one piece of good bread with some nutritious toppings is the perfect size breakfast – filling but not too much. Basically, I think creative toasts are cool. Actually, I’m considering adding a weekly toast feature to my blog. Thoughts? Maybe I’ll give them all names with alliteration too. No? Too far?

This one is a classic combo great for a sunny summer morning. I made it for a post-run breakfast and felt like a super human. 




1 piece of bread (obviously…)

1/4 of an avocado

~ 5 cherry tomatoes

Small handful of corn (mine was raw)

Small handful of black beans

Black pepper

Red pepper flakes


Dried oregano


Pop the bread in the toaster. You want it pretty toasted so it holds up to the toppings. When it’s done, slice 1/4 of an avocado and mash it on the bread. Sprinkle the corn and black beans over the top. Half the cherry tomatoes and plop those on too. Season with black pepper, red pepper flakes, cumin and oregano to your liking. I always like avocado toast with cumin and red pepper flakes for a kick and a nice bit of color 🙂

  • I used raw corn that was from the garden so super nice and sweet without cooking, but you could use cooked if you prefer
  • Maybe you have tomatoes, black beans and corn left over from making my Black Bean and Corn Salad Dip?! Perfect way to use those leftovers 🙂
